Install Ubuntu onto Surface Pro 3 microsd without dual boot

I have a surface pro 3 and I would like to install ubuntu (22.04) onto a microsd card in the easiest most risk free way possible. I don't need dual booting. I would prefer to manually select the boot device, i.e. if I turn the device on and do nothing, it boots into windows. If I turn it on and hold the volume down key down, it boots into grub or ubuntu (or something else which enables me to choose ubuntu)

I would like to have the installation encrypted.

I have googled this, but guides refer to dual booting, and physically unplugging the main drive. I'm not confident with proceeding with any of these guides (and I don't think it's even possible to get into the SP3 to unplug the drive) so I'm really hoping that there's an 'easy' way to do what I want to do.

I did go ahead with an installation and choose 'Something else' on the screen to choose the installation type, and I was able to identify the microsd card's main partition, but I backed out as I don't want to break the existing windows installation.

The ubuntu installer did offer the option of dual booting windows but I'm not sure if a) this will allow me to encrypt the ubuntu installation, or b) allow me to install it on the microsd card.
